Interpretation of sheet music?

I have a legitimate question on the topic of music. I have been playing guitar for seven years now and always used tabs. I’ve had a growing interest in classical music and would love to move to piano or accordion. However, I am unable to read scores. I understand whole note, quarter note, ect. but how do I tell what note is which? If someone could tell me what the notes are from the bottom of the lines to the top are it would be helpful. Also why are some notes upside down and others are straight up? Sorry for the novice question, I never had any formal experience reading music.

Oh and random question, does anyone know of artists that use accordions skillfully such as Yann Tiersen?
